Radish and Chive Blossom Tartine
As Farmers we like to eat from the garden, which means eating what is fresh and in season. In the spring, those options are a little more limited that in the heart of summer. But their are delightful spring options to grow and forage. This week we are enjoying radishes and Chive blossoms. Below is a recipe for a Radish Chive Blossom Tartine. Chive blossoms are also also delightful added to dressings for salads and Asparagus ( also a fresh spring favorite)
Radish Tartine with Chives and Butter
Ingredients:
● 1 baguette - Trim top and tail of baguette, cut in half across the middle and then cut each half the long way into thirds (Tartine style)
● 1 stick unsalted butter, room temperature
● 1 bunch radishes (about 8 small/medium radishes total)
● 1 small handful flowering chives
● Sea Salt for sprinkling (consider Star Bright Farm Lavender Salt)
Directions:
Toast bread until golden but still soft. Spread each slice with a generous amount of butte., Use the small hole on a box grater to grate radishes. Spoon grated radish - juice and all - over buttered baguette. Snip chives over radishes and top with chive flowers. Sprinkle with salt and serve.
